In preparation for the UN Food Systems Summit, key organizations are staging dialogues, including this one convened by UNFSS-AT2 China Action Hub. I am excited to join Meatless Monday partners, China's Good Food Fund, and Slow Food Great China, for a discussion about how to transform the main food source for urban communities in China — wet markets. Pressures to modernize these ancient institutions are great. Aging infrastructure, unimaginative management, and a complicated business model contribute to stress upon these important public markets. Having contributed a chapter to their handbook, Vision for a WET Market Revolution, I will join other authors who provide guidelines, best practices, and new ideas to energize these critical institutions to positively affect consumer and producer behavior in China. The collaboration reimagines Wet Market to mean W (Well-being), E (Ecology), and T (Transformation). This concept has been submitted to the Summit as a solution in the development process.
